Authentic Mexican Street Food in Ignacio, CO
Cuevas Tacos was started in 2019 by Oscar and Claudia Cuevas. This humble food truck is the source of some of the tastiest and most authentic Mexican street food in the whole southwest area.
Cuevas Taqueria opened in 2023 in Ignacio and is already pumping out delicious food.

Two tacos on a flour tortilla with scrambled eggs, chipotle aioli, shredded cheese, avocado with bacon or chorizo with breakfast potatoes.
Breakfast Burrito $10
Scrambled eggs, breakfast potatoes, cheese wrapped in a flour tortilla with green chile, melted cheese, sauteéd bell peppers and onions. Your choice of bacon, chorizo or sausage.
Breakfast Bowl $10
Breakfast potatoes, scrambled eggs, shredded cheese, pico de gallo, sour cream, avocado and salsa on the side. Your choice of bacon or chorizo.
Huevos Rancheros $10
Two corn tortillas with pinto beans and eggs, topped with homemade bell pepper tomato sauce, sour cream, panela cheese and sliced avocado.
Smothered Breakfast Burrito $15
Flour tortilla warapped with cheesey scrambled eggs and topped with green chile, breakfast potatoes, guacamole, pico de gallo and sour cream. Your choice of bacon, chorizo, sausage or veggie.
